Herbs de Provence Roasted Vegetables


I’m a huge fan of veggies, and always looking for new ways to prepare them. Just recently, I made a ginormous salad to bring to a party and had a ton of leftover vegetables. My first thought was to simply make a salad, but then I decided that cooking them in some fashion was more appealing. Obviously with all of the cooking/baking I do, I have a pantry-full of herbs and spices, so I took a look to see which ones I wanted to use, and ran across my Herbs de Provence, containing rosemary, thyme, marjoram, basil, sage and lavender. If you haven’t tried them, I highly recommend you do! This recipe is super easy, healthy, delicious and can be varied to suit your taste or what you have on hand. If you’re not a balsamic fan, you can substitute lemon juice.

Ingredients

  • Approximately 12 cups vegetables, chopped * (I used broccoli, cauliflower, carrots, onions, peeled garlic cloves, red potatoes, cucumber and grape tomatoes)
  • 1/4 cup olive oil
  • 3 tbsp. balsamic vinegar
  • 3 tsp. Herbs de Provence
  • Salt & pepper, to taste

Directions

  1. Preheat oven to 450 degrees.
  2. In a large bowl, combine all of the vegetables, set aside.
  3. In a small bowl, stir together the oil, vinegar, herbs, salt and pepper.
  4. Toss together with the veggies to coat well.
  5. Lightly grease a large roasting pan with cooking spray and spread evenly, in a single layer.
  6. Roast for approximately 30 minutes, stirring every 10 minutes, or until vegetables are cooked through and browned.

* I chopped the potatoes and carrots smaller so they wouldn’t require additional cooking time. However, if using larger pieces of root veggies, you can roast them first in the oven for a few minutes to ensure even cooking.

Poached Halibut with Oven-Roasted Vegetables & Mint Tea Broth

Ingredients

  • Olive oil cooking spray
  • Sea salt and ground black pepper, to taste
  • 1 baby eggplant, sliced into 1/4-inch rounds
  • 1 pint grape tomatoes
  • 4 cloves garlic, whole
  • 1 small zucchini, sliced into 1/4-inch rounds
  • 2 cups low-sodium chicken or vegetable broth
  • 2 high-quality mint tea bags
  • 1/2 bunch basil
  • 4 6-oz halibut fillets
  • 1/4 cup pine nuts, toasted
  • 7 to 8 basil leaves, cut into thin strips, for garnish

Directions

  1. Preheat oven to 400°F. Prepare 2 sheet pans by misting them with cooking spray, then sprinkle with salt.
  2. Arrange eggplant slices in a single layer on half of 1 sheet pan, and place tomatoes and garlic on other half. Spray tops lightly with cooking spray and season with salt and pepper.
  3. Place pan in oven for 10 to 12 minutes. Flip eggplant slices and toss tomatoes. (Tomatoes will blister as they cook.)
  4. Continue to cook for 5 to 7 more minutes.
  5. Remove pan from oven and place tomatoes on top of eggplant to flavor eggplant and keep slices moist.
  6. Keep oven at same temperature.
  7. On second sheet pan, lay zucchini slices in a single layer. Sprinkle with salt and pepper and mist lightly with cooking spray.
  8. Place pan in oven for 10 to 12 minutes. Flip zucchini and cook for 5 more minutes.
  9. While vegetables are in oven, pour broth into a 10-inch skillet and bring to a boil.
  10. Add tea bags and basil and season with salt. Allow to simmer for 7 minutes, then remove tea bags.
  11. When vegetables are close to being ready, bring broth to a simmer and place fish in skillet. Cover with parchment paper.
  12. Poach fish until it is white and a toothpick inserts very easily, about 12 minutes.
  13. Place fish on a plate and strain broth into a small bowl; adjust seasoning if necessary. 
  14. To serve, divide vegetables into 4 shallow bowls, place fish on top, then pour broth over fish.
  15. Garnish with pine nuts and basil leaves.

Getting Corny!


There are tons of different ways to cook corn on the cob… here are my two favorites.

On the Grill
Peel back the husks from the corn & remove the silk. Butter the kernels and sprinkle with salt & pepper and any other seasoning of your choice. Fold the husks back over the corn and grill over low heat for about 15 minutes, turning occasionally.

 

In the Oven

Remove the husk and silk from the corn. Get a sheet of heavy-duty aluminum foil and add 2 tbsp of melted butter to the middle of the foil. Place corn on the foil, add salt, pepper and garlic and roll the corn so it spreads the spices. Fold in half to keep all of the butter in the foil and for it to cook evenly. Cook for 25 minutes at 425F.
